Roasted Cauliflower

Yield: 4 servings

Ingredients:

  • 1 head cauliflower, cut into florets
  • 1 medium onion, sliced
  • 4 sprigs thyme
  • 4 garlic cloves, unpeeled
  • 3 tablespoons olive oil
  • Salt
  • Pepper
  • ½ cup grated Parmesan

Directions:

  1. Preheat oven to 425° F.
  2. Slice cauliflower in to flat florets.
  3. Combine cauliflower, onion, thyme, garlic, and oil; season with salt and pepper.
  4. Roast 35-40 minutes.
  5. Sprinkle with Parmesan, toss to combine, and cook 10–12 minutes longer.
